Historically made to see Spaniards through long Winters, chorizo provided flavour and sustenance during times of scarcity. The Spanish continue to revere chorizo, with residents in Galicia celebrating the sausage in an annual festival.
Chorizo is perfect on the BBQ. Cut in half, lightly grilled to release the flavours and served with a lemon mayonnaise - utterly perfect.
