Gaspacho, also called Andalusian gazpacho is a cold soup made of raw, blended vegetables.
This is a classic tomato recipe and is utterly wonderful on a warm summers day.
A classic of Spanish and Portuguese cuisine, it originated in the southern regions of the Iberian peninsula specifically Andalusia, Algarve, and Alentejo.

To serve Gazpacho Andaluz, shake or stir well before serving and pour into chilled bowls or glasses. Serve cold, straight from the refrigerator, and garnish with a drizzle of olive oil, diced vegetables, or fresh herbs for a refreshing and flavourful starter.
